Whipped Feta and Green Onion Dip

Ingredients:

  • 220 g creamy French feta
  • 0.5 cup mayonnaise
  • 110 g softened cream cheese
  • 2 tablespoons toasted sesame seeds
  • 2 teaspoons chopped fresh oregano
  • 1/4 tsp red pepper flakes
  • 1 large clove of garlic, grated
  • 0.5 cup finely grated Parmesan
  • 1 tbsp red wine vinegar
  • 8 green onions, finely chopped, plus extra for serving
  • Crackers for serving
  • Carrot and cucumber sticks for serving

Preparation:

  1. In the bowl of a stand mixer fitted with the paddle attachment, gently beat the feta, mayonnaise, and cream cheese on medium speed until smooth, 2 to 3 minutes.
  2. Stir in the sesame seeds, oregano, red pepper flakes, and garlic. Using a spatula, fold in the Parmesan, vinegar, and green onions. Season with salt to taste.
  3. Spoon the sauce into a bowl and sprinkle with green onions. Serve with crackers and fresh vegetables.
