Ingredients:
- 1 cup cake flour
- 0.5 tsp of soda
- 0.5 tsp fine salt
- 6 tablespoons unsalted butter
- 1/3 cup dark brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/3 tbsp. dark chocolate granules
- 1/3 tbsp. semi-sweet chocolate granules
- 1/3 tbsp. white chocolate granules
Preparation:
- Preheat oven to 190°C. Line a rimmed baking sheet with parchment paper. Combine flour, baking soda, and salt in a small bowl; set aside.
- Microwave the butter in a large bowl until melted, about 1 minute. Stir in the dark brown sugar and granulated sugar until smooth; beat in the egg and vanilla extract until fully incorporated. Mix in the flour and knead until smooth. Fold in the dark chocolate chips, semisweet chocolate chips, and white chocolate chips.
- Transfer the dough to the center of the prepared baking sheet. Form it into a circle 20 cm in diameter and about 1 cm thick.
- Bake the cookies, rotating the baking sheet halfway through, until the tops are golden brown, the edges are set, and the centers are still soft, 22 to 25 minutes. Let cool on the baking sheet for a few minutes, then use a large spatula to transfer the cookies to a wire rack to cool. Slice the cookies into wedges.
