Baked Tomato and Bread Salad

Ingredients:

  • 2 cups grape tomatoes
  • 3 tbsp olive oil + extra for drizzling
  • 3 cloves garlic, crushed
  • 3 sprigs of fresh oregano
  • 2 cups cubed Italian bread

Preparation:

  1. Preheat oven to 200°C.
  2. Place tomatoes, oil, garlic, and oregano in 25cm pie pans and toss to coat. Season with salt to taste.
  3. Bake for 10 minutes. Add the bread cubes and bake, stirring halfway through, until the tomatoes release their juices, about 10 more minutes. Drizzle with olive oil and serve warm.
