Ingredients:
- 450 g fresh strawberries, hulled and diced (about 3 cups)
- 2/3 cup granulated sugar
- 1 tbsp. l. orange liqueur
- 1 cup chilled heavy cream
Preparation:
- Combine 2 cups of strawberries and 0.5 cups of sugar in a blender or food processor and blend until smooth. Transfer to a medium saucepan and cook over medium heat until the juices thicken. Set aside and let cool, then refrigerate the jam for about 1 hour. Stir in the remaining 1 cup of strawberries.
- In a medium, clean, cold bowl, whip the cream with the remaining 2 tablespoons of sugar and the liqueur until stiff peaks form. Fold the whipped cream into the strawberry mixture. Refrigerate for about 30 minutes to set.
