Sweet potatoes in a steamer topcook.tomathouse.com
Ingredients:
- 2 medium sweet potatoes (about 220g each), washed with a brush
- Special equipment: steaming basket or colander
- Toppings (hot honey and chopped pecans; salted butter and chili powder; sour cream, chives, salt and black pepper; herb butter; salted butter and brown sugar; salsa and sharp cheddar; toasted pumpkin seeds, cilantro, salt and black pepper) of your choice
Preparation:
- Place a steamer basket or colander in a large saucepan. Add water until it comes 2.5 cm (1 inch) up the bottom of the steamer basket. Place the sweet potatoes in the steamer basket and bring the water to a boil. Once the water boils, cover the pot, reduce the heat to medium, and simmer until the potatoes are easily pierced with a knife, about 30 minutes.
- Remove the sweet potatoes from the steamer using tongs and let them rest for 5 minutes. Cut them in half lengthwise and serve as is or with your desired topping.
Note
Be sure to use whole potatoes of similar size so they cook at the same time. If desired, you can peel and cut the sweet potatoes into large pieces before steaming to reduce cooking time. Checking for doneness is the same as when boiling whole potatoes.
