Spelt with caramelized vegetables and apples topcook.tomathouse.com
Ingredients:
- 1 and 1/4 cups polished spelt
- 1 tbsp. l. olive oil
- 1 small onion, thinly sliced
- 1 tbsp unsalted butter
- 1 medium turnip, cut into 1 cm pieces, + chopped tops
- 1 red apple, cut into 2cm pieces.
- 1 pinch crushed red pepper flakes
Preparation:
- Bring a medium saucepan of salted water to a boil. Add the spelt and cook, stirring occasionally, until al dente, about 25 minutes; drain.
- Meanwhile, heat the oil in a large skillet over medium-high heat. Reduce the heat to medium, add the onion and a pinch of salt, and cook, stirring frequently, until the onion is soft and light golden, about 15 minutes.
- Increase the heat to medium-high and add the butter. Once melted, add the turnips, herbs, and apple and cook, stirring, until softened and browned, another 10–12 minutes.
- Add the spelt and red pepper to the pan and stir. Season with salt and serve warm.
