Tofu toast with avocado

Ingredients:

  • 1 firm tofu, weighing 340 g, patted dry
  • 1 avocado, sliced
  • 0.5 tsp garlic powder without salt
  • A pinch of red pepper flakes
  • Submission Guidelines: sprouts, thinly sliced ​​radish, chopped hard-boiled egg, optional

Preparation:

  1. Preheat oven to 220°C. Line a baking sheet with parchment paper.
  2. Cut a block of tofu in half horizontally to create two blocks about 2 cm thick. Then cut the two blocks in half, this time diagonally, to create four triangular pieces of "tofu toast."
  3. Place the tofu in a single layer on parchment paper. Drizzle with oil and bake until golden brown and crisp, about 20 minutes.
  4. Remove the tofu from the oven, turn each piece over, and drizzle with oil. Then return to the oven and bake for another 10 minutes. Let it cool slightly, 5–10 minutes.
  5. Before serving, top the tofu toasts with avocado and sprinkle with garlic powder. Season with black pepper and red pepper flakes, and top with sprouts, radishes, and a hard-boiled egg, if using.
  6. Leftover tofu toast can be stored in a tightly sealed container in the refrigerator for up to a week. Reheat in the oven at 200°C for 5–8 minutes or in the microwave for 1 minute.
