Ingredients:
- 450 g sweet potatoes, peeled and cut into 1 cm pieces.
- 1 carambola, sliced
- 1-3 jalapeños or other green chilies, finely chopped (optional)
- Juice of half a lemon
- 1 teaspoon chaat masala spice mix
- 0.5 tsp roasted ground cumin (or 1 tsp roasted and ground cumin seeds)
- 0.5 tsp chili powder
- Chutney with tamarind and/or mint and coriander, chopped fresh coriander and pomegranate seeds, for serving
Preparation:
- Place the sweet potatoes in a medium saucepan and cover with cold water. Bring to a boil over medium-high heat, then reduce the heat and simmer until the sweet potatoes are tender, about 5 minutes. Drain and transfer the sweet potatoes to a large bowl.
- Add star fruit, jalapeño, lemon juice, chaat masala, cumin, chili powder, and a pinch of salt and stir until evenly distributed. Drizzle with chutney and garnish with cilantro and pomegranate seeds. Serve warm or at room temperature.
