Spicy Caramelized Sweet Potatoes

Ingredients:

  • 2 x 800g cans of sliced ​​sweet potatoes, drained
  • 0.5 cup pecans, finely chopped
  • 6 tablespoons unsalted butter, cut into small pieces
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 1/3 cup brown sugar
  • 2 teaspoons pumpkin pie spice mix
  • 1/4 tsp cayenne pepper
  • 3 cups mini marshmallows

Preparation:

  1. Spray the inside of a 5-quart slow cooker with cooking spray. In a large bowl, combine the sweet potatoes, pecans, butter, and orange juice concentrate until smooth.
  2. In a small bowl, combine brown sugar, pumpkin pie spice, and cayenne pepper. Sprinkle the mixture over the sweet potatoes and toss to combine. Transfer to the slow cooker.
  3. Cover and cook on low heat for 2-3 hours.
  4. Sprinkle the sweet potatoes with marshmallows. Cover and cook for another 15 minutes or until the marshmallows are melted.
