Ingredients:
- 0.5 cup dark brown sugar
- 110 g canned pineapple chunks, drained
- 1/4 tbsp. sambal-olek
- 12 thick strips of bacon
- Coarsely ground black pepper
Preparation:
- Preheat oven to 200°C.
- Line a baking sheet with parchment paper, top with bacon strips, and season with pepper. Bake until most of the fat has rendered, 8-10 minutes. Pat the bacon dry with paper towels to remove as much excess fat as possible.
- Place a rack on a baking sheet and arrange the bacon on top. Brush the bacon with the glaze.
- Bake until the pineapple pieces are golden brown and the bacon is crispy, 2-3 minutes. Let cool for a few minutes before serving.
