Blackberry jam with basil topcook.tomathouse.com
Ingredients:
- 450 g frozen blackberries, thawed, do not pour out the juice
- 4 cups fresh basil leaves (100 g)
- 2/3 cup sugar
- 1/4 cup freshly squeezed orange juice (1 large orange)
- 3 tbsp freshly squeezed lemon juice (1 medium lemon)
Preparation:
- Place the blackberries and their juice in a medium saucepan and mash lightly with a fork.
- In a food processor, combine basil, sugar, orange and lemon juice. Blend until smooth.
- Add the mixture to the blackberries and bring to a boil over medium heat. Simmer until the jam thickens, stirring occasionally, for 25-30 minutes.
- Remove the pan from the heat and let the jam cool for 1 hour (it will continue to thicken as it cools). Transfer to a jar, seal tightly, and refrigerate. Store for up to 3 days.
