Ingredients:
- 1 cup cherries, halved, pits removed
- 4 tablespoons of sugar
- 2 tbsp kirsch
- 0.5 cups heavy cream
- 6 tbsp. crushed ice
- Fresh mint sprigs, for garnish
Preparation:
- Combine cherries, 2 tablespoons sugar and kirsch in a bowl and mash with a mixer or potato masher, reserving any berry pieces.
- Let it sit at room temperature for at least 15 minutes to release the juices.
- Whip the cream with the remaining 2 tablespoons sugar until very soft peaks form.
- Add crushed ice to the cherries and stir thoroughly. Divide the mixture into 4 small glasses and top with a few dollops of whipped cream. Garnish with mint.
