Roasted peaches with tequila topcook.tomathouse.com
Ingredients:
- 2 tbsp. pineapple juice
- 1 tbsp. honey
- 1/4 cup anejo tequila
- 110 g melted butter
- 3 peaches, halved, pits removed
- 2 cups frozen plain yogurt
Preparation:
- In a medium saucepan, combine the pineapple juice and honey. Bring to a boil over medium-high heat and simmer until the juice thickens slightly, about 15 minutes.
- Add the tequila and continue cooking for another 2 minutes. Turn off the heat and set the syrup aside.
- Meanwhile, preheat a grill pan over medium-high heat. Brush each peach half with butter and grill, flat sides down, until heated through, about 4 minutes.
- Add the roasted peaches to the tequila syrup and let sit for 20 minutes before serving.
- Serve peaches with frozen yogurt and a drizzle of tequila syrup.
