Hot creamy rum with spices and pineapple juice

Ingredients:

  • 4 tablespoons softened unsalted butter
  • 2 tablespoons light brown sugar
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground allspice
  • 1/4 teaspoon freshly grated nutmeg
  • 3 cups of sugar-free pineapple juice
  • 120 ml dark rum
  • 4 cinnamon sticks

Preparation:

  1. In a small bowl, beat together the butter, sugar, vanilla, cinnamon, allspice, and nutmeg until smooth.
  2. In a medium saucepan, heat the pineapple juice until very hot, but do not boil. Remove from heat and stir in the herb butter.
  3. Pour the rum into four mugs. Pour the pineapple juice into the mugs. Place a cinnamon stick in each mug and serve.
