Apple Crisp with Oatmeal

Ingredients:

  • 2/3 cup oatmeal
  • 1/3 cup premium flour
  • 1/3 cup dark brown sugar
  • 1/3 cup toasted walnuts
  • A pinch of fine salt
  • 6 tablespoons chilled unsalted butter, cut into pieces
  • 4 medium baking apples, such as Braeburn, Roma, or Golden Delicious
  • Sugar-free whipped cream, optional

Preparation:

  1. Preheat oven to 190°C. Lightly grease 6 180ml ramekins.
  2. Oatmeal topping: In a medium bowl, combine the oats, flour, brown sugar, walnuts, and salt. Rub in the butter with your fingertips until the mixture forms pea-sized pieces.
  3. Peel and core the apples, slice them, and distribute them evenly among the ramekins. Spread the crunchy oatmeal topping evenly over the fruit.
  4. Place ramekins on a baking sheet and bake until fruit juices bubble around the edges and topping is golden brown, about 30 minutes.
  5. Preheat the oven to broil. Place the crisps about 10 cm from the broiler and broil until golden brown, about 30 seconds. Let cool for about 15 minutes before serving. Serve the apple crisps warm, topped with whipped cream if desired.
