Ingredients:
Waffles
- 1 3/4 cups premium wheat flour
- 1 1/4 cups yellow cornmeal
- 1 tbsp baking powder
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 2 cups of milk
- 3 tablespoons of vegetable oil
- 2 large eggs
- Grated cheddar cheese, for serving
- Sour cream, for serving
- Chopped fresh coriander leaves, for serving

Hot chili
- 450 g lean ground beef from the shoulder
- 2 cans (425 g) beans in spicy tomato sauce
- 1 can (425 g) of tomato sauce
- 1 can (425 g) canned corn (drained)
- 1 can (280 g) of canned tomatoes and green chili peppers, diced
- 1 chopped onion
- 1 chopped green bell pepper
- 2 crushed cloves of garlic
- 2 tbsp. chili powder
- 1 tbsp. ground cumin
- 1 teaspoon of salt
- 1 tbsp freshly ground black pepper
Preparation:
- Waffles:
Preheat the waffle iron according to the manufacturer's instructions.
In a large bowl, combine the wheat and corn flours, baking powder, sugar, and salt. Add the milk, butter, and eggs and mix until smooth. Pour the batter into the waffle iron in batches and bake. Keep warm.
Serve with hot chili. Top with grated cheddar cheese, fresh cilantro, and sour cream.
- Hot chili:
In a large Dutch oven over medium-high heat, brown the ground beef until fluffy. Add the onion, bell pepper, garlic, chili powder, cumin, salt, and pepper.
Add the beans, tomato sauce, corn, tomato pieces, and green chili pepper. Reduce heat and simmer, stirring occasionally, for 30 minutes, uncovered.
