Ingredients:
Warp:
- Cornmeal for dusting
- Wheat flour for dusting
- 1 ball (450 g) store-bought pizza dough
Filling:
- 1 piece (110 g) feta cheese (crumbly)
- 3 tbsp. l. olive oil
- 2 leeks, thinly sliced (white and light green parts only)
- Salt and ground black pepper
- 3 crushed cloves of garlic
- 340 g young spinach shoots
- 3/4 cup chopped fresh mint
- 2 tbsp softened butter
Preparation:
- For the base: Position a rack in the center of the oven. Preheat the oven to 230°C (430°F). Sprinkle a heavy baking sheet with cornmeal.
On a lightly floured surface, roll out the dough into a rectangle approximately 40 x 20 cm, to a thickness of 0.5 cm. Transfer the dough to the prepared baking sheet.
- For the filling: Heat oil in a large skillet over medium-high heat. Add the leeks and season with salt and pepper. Cook, stirring frequently, until softened, about 5 minutes. Add the garlic and cook for 30 seconds, until fragrant.
Add the spinach in batches and cook until tender, about 5 minutes. Remove from heat, stir in the feta cheese and mint. Season with salt and pepper to taste.
Prick the dough all over with the tines of a fork. Spread the spinach mixture and butter evenly on top. Bake until golden and crisp, 15-18 minutes. Cut into squares and serve.
