Asian-Style Steamed Fish

Ingredients:

  • 1 - 1.2 kg of fish fillet (cod or halibut)
  • 1 jalapeño pepper, seeded and cut into strips
  • 1 red bell pepper
  • 5 green onions, cut into large sticks
  • 1 root (5 cm) ginger, peeled and cut into fine strips
  • Salt and freshly ground pepper
  • 2 tablespoons soy sauce
  • 3 tbsp cold-pressed nut oil
  • 3 cloves garlic, chopped
  • 1/2 teaspoon sugar
  • Cooked long grain rice, for garnish

Preparation:

  1. Salt the fish: Rinse the fish fillets under cold water and pat dry. Season the fish with 1 teaspoon of salt and a little pepper. Place half the fish fillets in a single layer in a glass or ceramic ovenproof dish, top with half the green onions and ginger, and cover with the remaining fish fillets. Drizzle with 1 tablespoon of soy sauce and refrigerate for 30 minutes.
  2. To steam the fish: Place the fish in a steamer and cover with a lid. Bring the water to a boil and cook the fish for 15-20 minutes. Transfer the fish to a serving dish and pour the juices over it.
  3. Prepare the sauce: Heat the nut oil in a frying pan. Add the remaining ginger, garlic, jalapeño pepper, sugar, and 1/2 teaspoon salt. Cook for 30 seconds over high heat, stirring constantly. Add 1 tablespoon of soy sauce and remove from the heat.
  4. Slice the remaining green onions and bell pepper into strips, sprinkle them over the fish, and pour the sauce over them. Place the fish on a plate with rice.
