Accordion-baked potatoes with bacon topcook.tomathouse.com
Ingredients:
- 12 medium-sized potatoes, peeled
- 4 thick slices bacon, each cut crosswise into 9 pieces
- 110 g butter
- 2 green onions, finely chopped
- 2 tbsp finely chopped parsley
- 1 clove garlic, finely chopped
Preparation:
- Place the bacon pieces on a baking sheet and freeze until firm, about 30 minutes. Meanwhile, preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Bring a large pot of salted water to a boil.
Using a sharp knife, make crosswise cuts in each potato, about 0.5 cm apart, stopping about 0.8 cm from the edge of the potato.
Add the potatoes to boiling water and cook for 4 minutes. Remove them from the pan with a slotted spoon and carefully place them on a baking sheet; let cool slightly. Then insert 3 slices of frozen bacon into the slits of each potato, spreading the bacon evenly, leaving a little overhang. Melt 5 tablespoons of butter and generously brush the slits and all over the potatoes. Reserve some butter. Season the dish with salt and pepper to taste.
- Transfer the potatoes to the oven and bake until golden brown and crisp, about 2 hours, brushing with melted butter halfway through.
- When the potatoes are almost done, melt the remaining 3 tablespoons of butter and mix with the onion, parsley, and garlic. Spoon 1 tablespoon of butter onto the potatoes and bake for another 5 minutes. Transfer to a platter and serve.
