How to cook beets properly

Preparation:

  • 700 g beets, leaves and roots trimmed
  • 2 tablespoons lemon juice or vinegar

Place the beets in a large saucepan and add water and lemon juice or vinegar. This will help preserve the beets' color. Bring to a boil, reduce heat, and simmer until tender, 45 minutes to 1 hour. Place the saucepan under cold running water and rinse until the beets are cool. The skins should now be easy to peel.
