New York steak for a romantic dinner for two

Ingredients:

  • 2 pieces of striploin steak, 230 g each (from the thin edge cut, about 3.5 cm), generously rub with salt and pepper
  • 4 jumbo shrimp, shelled and deveined
  • 450 g Yukon Gold potatoes (about 6 pcs.), cut into 0.3 cm circles.
  • 300 g frozen spinach, thawed and squeezed
  • 2 tablespoons (30 g) unsalted butter, melted, plus more for greasing the pan
  • 2 tsp chopped thyme leaves
  • 3 small cloves garlic, divided between stages
  • Salt and ground black pepper
  • 1/4 tbsp. grated parmesan
  • 2/3 cup heavy cream 33%
  • 60 g of cream cheese at room temperature
  • 2/3 tbsp. grated Gruyère cheese (about 140 g)
  • Special device: 45 x 32 cm baking sheet; 2 small ramekins of 115 g each.

Preparation:

  1. Place a rack in the top part of the oven and preheat to 250°C.
  2. In a small bowl, combine the shrimp, butter, some thyme, garlic pressed through a garlic press, and 1/2 teaspoon salt. Toss the shrimp to combine, and keep covered until needed.
  3. In a separate bowl, combine the Parmesan, 1/3 cup cream, remaining thyme, garlic, and season with 1/2 teaspoon salt and ground pepper.
  4. Place potato slices in a single layer on a pre-greased baking sheet, sprinkle with cheese, and top with the remaining potatoes.

    Cover the potatoes with foil and bake until tender, pierce with a fork to check for doneness, 15 to 17 minutes.
  5. Mash the cream cheese into the remaining 1/3 cup garlic cream until smooth. Stir in the spinach. Place the creamed spinach in the ramekins and press down to release the liquid.

    Return to the potatoes, remove the foil, and sprinkle with Gruyère cheese. Place the steaks next to them and set out the ramekins.

    Bake until steaks are cooked through, about 12 to 14 minutes, and a thermometer inserted into the center reads 95°F (35°C).
  6. Remove the roast and turn on the broiler. Place the shrimp on the baking sheet, tails facing each other, to form a heart shape. Continue broiling for another 3-4 minutes. Check the internal temperature of the steaks; a thermometer should read 45°C.
  7. Let the meat rest under foil for about 5 minutes, and cut into slices.
