Homemade chips with barbecue seasoning

Ingredients:

    Chips

  • 700 g of potatoes
  • Vegetable peanut oil for frying

    BBQ spice mix

  • 1.5 cups paprika
  • 3/4 cup granulated sugar
  • 3 and 3/4 tbsp onion powder
  • Mix all ingredients

Preparation:

  1. Heat peanut oil in a deep fryer to 190°C.
  2. Peel the potatoes and slice them very thinly, 0.3 cm thick, using a mandoline with a smooth-cut blade. Keep the sliced ​​potatoes in very cold water until you're ready to fry the entire batch. Drain the potatoes in a colander and pat them dry with paper towels.
  3. Fry the potatoes in batches for 3-4 minutes. Once golden brown, remove them from the fryer and place them on a paper towel-lined baking sheet to absorb excess oil. Immediately season with salt, pepper, and barbecue seasoning to taste.
