Energy bars with sesame and dried apricots

Ingredients:

  • 340 g dried apricots
  • 1 cup wheat germ
  • 1/2 tbsp. sesame tahini paste
  • 1/4 cup raw, shelled hemp seeds
  • 1/4 cup black or white sesame seeds (or both)

Preparation:

  1. Line a baking pan with foil to a depth of 20 cm, leaving a 15 cm overhang on both opposite sides.
  2. In a food processor, puree the dried apricots. Add the wheat germ and hemp seeds and process until the ingredients become sticky. Add the tahini and begin blending. Add the sesame seeds and mix until evenly distributed.
  3. Transfer the mixture to the prepared pan. Using the excess foil, press the mixture firmly and evenly into the pan. Refrigerate for about 2 hours until firm. Lift the mixture out of the pan using the edges of the foil and invert it onto a cutting board. Carefully scrape the foil off the mixture and cut it in half vertically, then into quarters horizontally to make 8 equal bars. Wrap each bar individually in parchment paper and refrigerate for up to 2 weeks.
