Citrus Kale Salad topcook.tomathouse.com
Ingredients:
- 1 bunch kale, leaves removed from stems
- 1/4 cup orange juice
- 2 tbsp. l. olive oil
- 1 teaspoon of sugar
- 1 clove garlic, pressed or grated
- 1 heaping tbsp sour cream or yogurt
- 3 tangerines or 1 orange, peeled and cut into large pieces
- 1 jalapeño pepper, seeded and finely chopped
- 110 gr. goat cheese
Preparation:
- Gather the kale leaves into bunches and shred them thinly with a sharp knife. Continue shredding until you have a large mound of kale.
- To prepare the dressingIn a small jar, combine orange juice, olive oil, sugar, garlic, and a little salt and pepper. Shake vigorously to combine, then add sour cream or yogurt and shake again until smooth and creamy.
- Toss the kale with half the dressing for about 1 minute, then add the citrus slices and shredded jalapeño. Toss well again. Add more dressing as needed. Leftover dressing can be stored in the refrigerator and used in any salad.
- One minute before serving, mash the goat cheese into large chunks with a fork and stir them into the salad. Serve!
Advice: Since kale stays crisp for a long time, the salad can be mixed 15 minutes before serving.
