Ingredients:
- 1/2 pineapple, cut into 2cm thick rings, remove core
- 1/4 cup honey
- Juice from 2 limes
- 1/2 tsp ground cinnamon
- 3/4 cup vanilla ice cream
Preparation:
- In a baking dish, combine honey, lime juice, and cinnamon. Place the pineapple rings in the glaze and let them marinate for 2 hours, turning occasionally.
- Heat a grill pan over medium heat.
Place the pineapple chunks on a preheated grill pan. Grill on both sides until the glaze caramelizes and brown stripes form (about 2 minutes per side).
- For servingPlace the pineapple rings on individual plates and top with a scoop of ice cream. Drizzle with the remaining honey syrup and serve.
