Ingredients:
Mojito
- 1 cup fresh mint leaves
- 120 ml freshly squeezed lime juice
- 120 ml sugar syrup, see recipe below
- 480 ml coconut water, chilled
- 250 ml white rum, chilled
- Ice
Sugar syrup
- 1 cup granulated sugar
Preparation:
- Pour lime juice, sugar syrup, and mint leaves into a pitcher. Mash the mint to release its oils.
- Pour in coconut water and rum. Fill the pitcher with ice, stir, and refrigerate.
Sugar syrupIn a medium saucepan, combine the sugar and 1 cup of water. Bring to a boil over medium-high heat. Cook, stirring, for 1 minute, until all the sugar has dissolved. Remove from heat and let the syrup cool completely.
