Ingredients:
- 1 and 1/4 cups skim milk, heated to just below boiling point
- 1.5 cups regular oatmeal
- 2 large eggs, beaten
- 1 tbsp. vegetable oil
- 1/3 tbsp. maple syrup
- 1/4 cup whole wheat flour
- 1.5 tsp baking powder
- 1/4 teaspoon salt
- 1/4 tsp cinnamon
- 1 cup peeled and diced peaches
- 1/2 cup sliced almonds
Preparation:
- Pour hot milk over the oatmeal, stir and let stand for 15 minutes.
Stir in eggs, vegetable oil and maple syrup.
- In a separate bowl, combine the flour, baking powder, salt, and cinnamon. Pour the mixture into the oat mixture and knead.
Stir in peaches and almonds.
- Heat the griddle surface over medium heat. Lightly grease it with oil. Place a small amount of batter (10 g) on the griddle and gently spread it out to even it out (or use a pancake ring).
Cook until browned (about 3 minutes), then turn over and cook for another 2 minutes.
- Enjoy warm cookies straight from the grill. Refrigerate for up to 2 days. Microwave cookies again for 15 seconds on high.
