Classic moist bread with dates and nuts

Ingredients:

  • 1 cup of boiling water
  • 250 g chopped dates
  • 2 tbsp (30 g) butter
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 and 1/4 cups premium flour (300 g)
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup chopped walnuts

Preparation:

  1. Preheat oven to 175°C. Grease a 22x12x7 cm loaf pan.
  2. Place the chopped dates in a medium bowl, pour boiling water over them, and add the butter (you'll need the liquid). Using a mixer, beat the sugar and egg until light and fluffy.

    In another bowl, combine flour, baking powder, and salt. Add to the beaten mixture, alternating with the dates and water. Stir in the chopped walnuts.
  3. Bake in the preheated oven for 45 to 55 minutes, or until a wooden toothpick inserted into the center of the loaf comes out clean.

    Orange cream cheese: In a bowl, beat 120g of softened cream cheese with 1.5 tsp of finely grated orange zest, 3 tbsp of powdered sugar and a few drops of vanilla.
