Ingredients:
- 2 tsp grated ginger
- 2 green onions, thinly sliced
- Juice of 1 lime
- 1 small red onion, finely diced
- 1 pineapple, sliced and grilled or fried until soft, then diced
- 1/2 or 1 habanero chili pepper, finely chopped
- A little canola oil
- Corn tortilla chips or banana chips, for serving
Preparation:
- In a large bowl, combine ginger, green onion, lime juice, red onion, pineapple, chili, and oil. Season with salt and pepper. Serve on tortillas or banana chips.
