No-Bake Chocolate Covered Peanut Butter Sandwich Cookies

Ingredients:

  • 1 cup peanut butter
  • 60 Classic Round Crackers
  • 2.5 tbsp. milk chocolate granules
  • Red or green sprinkles for decoration

Preparation:

  1. Line a baking sheet with parchment paper. Spread 1 teaspoon of peanut butter on half of the crackers and top with the remaining crackers. Arrange on the prepared baking sheets and refrigerate for 20-30 minutes to set.
  2. Place the chocolate chips in a microwave-safe bowl and microwave on medium power in 15-second intervals, stirring, until the chocolate is melted, 1 minute 15 seconds to 1 minute 30 seconds. Using 2 forks, dip each graham cracker sandwich into the melted chocolate to coat completely. If the chocolate begins to harden, microwave again. Once all the cookies are coated, decorate them with red or green sprinkles.
  3. Place the cookies back on the baking sheet and refrigerate for 30 minutes.

    Store sandwich cookies in an airtight container at room temperature for up to 1 week.
