Spinach crostini wrapped in bacon topcook.tomathouse.com
Ingredients:
- 1 pack 150g frozen chopped spinach, thawed and squeezed dry
- 12 slices bacon, cut in half crosswise
- 2 tablespoons dark brown sugar
- 220 g of cream cheese, room temperature
- 1 tbsp. grated parmesan
- 1/4 cup mayonnaise
- 2 cloves garlic, grated
- 24 slices baguette, cut diagonally (0.5 cm thick; from 1 baguette)
Preparation:
- Preheat oven to 220°C.
In a medium bowl, toss the bacon with brown sugar until evenly coated. Spread the bacon on a baking sheet and bake until golden brown around the edges but still tender, about 7 minutes. Transfer to a plate. Wipe the baking sheet clean and spray with cooking spray.
- In a medium bowl, combine spinach, cream cheese, Parmesan, mayonnaise, garlic and 1/4 teaspoon pepper.
- Spread 1 tablespoon of the spinach mixture on each slice of bread and wrap it with a piece of bacon, tucking the ends under the bread (the bacon should form a belt). Arrange the crostini on the prepared baking sheet and bake until the bacon is deep golden, about 15 minutes. Serve the crostini warm.
