Ingredients:
- 2 cups of oatmeal
- 2 tsp freshly squeezed lemon juice
- 1/8 tsp red pepper flakes (optional)
- 150 g spinach
- 1 cup grape tomatoes, halved
- 3/4 cup crumbled feta
- 2 tbsp. l. olive oil
- 2 tsp finely chopped fresh dill
- 2 green onions, thinly sliced
- Olives, sliced (optional)
Preparation:
- In a large saucepan, combine 4 cups water, lemon juice, 1 1/4 teaspoons salt, 1/2 teaspoon pepper, and red pepper flakes and bring to a boil.
- Stir in the oats, spinach, and tomatoes, reduce heat to medium, and cook, stirring frequently, until the oats are softened and the mixture thickens, about 7 minutes. Remove the pan from the heat and stir in the feta, olive oil, and dill.
- Divide the oats among bowls and garnish with chives and olives, if using.
