Watermelon slices with cherry tomatoes, feta and arugula topcook.tomathouse.com
Ingredients:
- 1 large seedless watermelon
- 0.5 cup arugula
- 1/4 cup crumbled feta
- 1/4 cup thinly sliced red onion
- 1/4 cup cherry tomatoes, halved
- 1/4 cup balsamic vinegar
- 1 tbsp. sugar
Preparation:
- RefuelingIn a small saucepan, combine the balsamic vinegar and sugar. Cook over medium-high heat until the mixture has reduced by half and thickened.
- Cut a 2-cm-thick disc from the center of the watermelon and trim off the rind. Cut the disc into 6 wedges, then reassemble the wedges into a circle.
- Evenly distribute arugula, feta, red onion, and cherry tomatoes among the watermelon slices. Drizzle with balsamic vinaigrette.
