Strawberries in balsamic sauce with ricotta cream

Ingredients:

  • 1 cup semi-skimmed ricotta
  • 2 tablespoons of honey
  • 0.5 tsp vanilla extract
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons of sugar
  • 450 g strawberries, hulled and quartered
  • 2 tablespoons fresh basil leaves, cut into strips

Preparation:

  1. Place the ricotta, honey, and vanilla extract in a small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  2. In a small saucepan, combine the balsamic vinegar and sugar and bring to a boil. Cook over medium heat for 2 minutes, stirring occasionally. Then cool completely.
  3. In a medium bowl, toss berries with basil and balsamic vinegar.
  4. Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.
