Strawberries in balsamic sauce with ricotta cream topcook.tomathouse.com
Ingredients:
- 1 cup semi-skimmed ricotta
- 2 tablespoons of honey
- 0.5 tsp vanilla extract
- 3 tablespoons balsamic vinegar
- 2 tablespoons of sugar
- 450 g strawberries, hulled and quartered
- 2 tablespoons fresh basil leaves, cut into strips
Preparation:
- Place the ricotta, honey, and vanilla extract in a small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
- In a small saucepan, combine the balsamic vinegar and sugar and bring to a boil. Cook over medium heat for 2 minutes, stirring occasionally. Then cool completely.
- In a medium bowl, toss berries with basil and balsamic vinegar.
- Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.
