Limoncello Fizz Cocktail

Ingredients:

  • 60 ml. Limoncello liqueur
  • 60 ml Chardonnay
  • 3 fresh sprigs of thyme
  • 1 cup of ice
  • 1 pasteurized egg white (or equivalent egg white substitute)
  • 1 teaspoon gin
  • Carbonated water
  • 1 lemon twist

Preparation:

  1. Combine thyme and limoncello in a glass and muddle with a muddler or the handle of a wooden spoon for 2 minutes.
  2. Strain the limoncello and pour it into a blender along with the Chardonnay, ice, egg white, and gin. Blend until smooth.

    Note

    If a recipe calls for raw or undercooked eggs, chefs recommend using eggs whose shells have been treated to kill salmonella by pasteurization or another method, or using an equivalent egg white substitute.

  3. Pour into a chilled glass and top with sparkling water. Garnish with the remaining thyme sprig and a twist of lemon peel.
