Black bean burger

Ingredients:

  • 2 cups cooked black beans, drained and mashed with a fork
  • 1 cup spiced breadcrumbs
  • 1/4 cup grated onion
  • 0.5 tsp chili spice mix
  • 1 egg
  • Canola oil to grease the grill pan
  • 1 - 2 Kaiser rolls
  • Arugula, for assembly
  • Tomato slices, for assembly
  • Mayonnaise, for assembly

Preparation:

  1. In a medium bowl, mash the beans.
  2. Add spiced breadcrumbs, grated onion, chili spice mix, an egg and a little salt and black pepper.
  3. Add some water.
  4. Form the mixture into one large (or 2 small) patties.
  5. Place on a plate.
  6. Heat a grill pan over medium-high heat and add a little canola oil. Add the patties and cook for 4 minutes.
  7. Turn over and add a slice of cheese, fry for 4 minutes.
  8. Cover with another pan and let steam for 2 minutes.
  9. Meanwhile, mix mayonnaise with a splash of hot sauce and spread it on the buns. Serve the vegetarian patties on the buns with arugula and tomato slices.
