Black bean burgers topcook.tomathouse.com
Ingredients:
- Half a medium yellow onion, coarsely chopped
- 1 tbsp. minced garlic
- 2 cans black beans, 425g each, rinsed separately
- 2 tablespoons chopped cilantro leaves
- 2 tsp chopped parsley leaves
- 1 egg
- 0.5 tsp red pepper flakes
- 0.5 cups breadcrumbs
- Salt and freshly ground black pepper
- 4 hamburger buns
Additional fillings
- 1 tomato, sliced into rounds
- 4 small leaves of romaine lettuce or any other type you have on hand
- 1/4 cup ketchup
Preparation:
- Preheat a grill or grill pan over medium-low heat.
- In a food processor, puree the onion and garlic. Add 1 can of black beans, cilantro, parsley, egg, and red pepper flakes and process.
- Transfer the mixture to a large bowl, add the remaining can of black beans and breadcrumbsAdd salt and pepper to taste and mix well.
- Divide 2/3 of the mixture among 4 portions and form into patties. Set aside the remaining mixture for another use, such as black bean enchiladas. Place the patties on an oiled grill and cook for about 6 minutes per side, or until heated through. Toast the buns on the grill. Place a patty on the bottom half of each bun. Top with lettuce, tomato, and ketchup. Top with the top halves of the buns and serve.
