Ingredients:
- 220 g ricotta
- 60 g grated provolone cheese
- 60 g grated Pecorino cheese
- 1 large egg
- 2 tbsp chopped fresh basil
- 1 teaspoon coarse salt
- 1 teaspoon freshly ground black pepper
- 1 sheet frozen puff pastry, thawed
- Melted butter to grease the dough
- Sesame seeds, for sprinkling
- Heated marinara sauce, for filing
Preparation:
- Preheat the air fryer to 190°C. Combine the ricotta, provolone, pecorino, egg, basil, salt, and pepper in a medium bowl; mix well.
- Roll out the puff pastry until there are no creases and cut into 16 equal squares. Spread 1 tablespoon of the cheese mixture on each square of dough.
- Lightly brush the edges with melted butter, fold in half to form a triangle, and pinch to seal; crimp the edges with a fork. Repeat with the remaining squares of dough. Transfer the turnovers to a parchment-lined baking sheet in the refrigerator as they form.
- Brush the tops of the turnovers with melted butter and sprinkle with sesame seeds. Place 5–6 turnovers in the air fryer basket and cook until golden brown, 8–10 minutes. Fry the remaining turnovers in the air fryer and serve with warm marinara sauce.
