Shrimp baked in garlic sauce topcook.tomathouse.com
Ingredients:
- 1 kg. unpeeled shrimp
- 3 tbsp. l. olive oil
- 2 tbsp. dry white wine
- 12 tbsp (170 g) butter at room temperature
- 4 crushed cloves of garlic
- 1/4 cup chopped shallots
- 3 tbsp chopped fresh parsley leaves
- 1 teaspoon chopped fresh rosemary leaves
- 1/4 tsp crushed red hot pepper
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 egg yolk
- 2/3 cup breadcrumbs
- Salt and ground black pepper
- Lemon wedges, for garnish
Preparation:
- Preheat oven to 220C.
- Peel the shrimp, place them in a bowl, and toss with olive oil, wine, 2 teaspoons of salt, and 1 teaspoon of pepper. Let them sit at room temperature while you make the butter-garlic sauce.
- In a small bowl, combine the softened butter with the shallot, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, breadcrumbs, 1/2 teaspoon salt, 1/4 teaspoon pepper, and minced garlic.
- Take a 35cm oval baking dish and, starting from the outer edge, arrange the shrimp in a uniform position, tails facing the center of the dish. Pour the remaining marinade over the shrimp. Then spread the garlic-butter sauce evenly over the shrimp. Bake for 10 to 12 minutes, until the sauce begins to simmer. If you like a crispy crust, you can leave it in for an additional minute. Serve the shrimp with lemon wedges.
