Ingredients:
Hamburgers
- 450-570 g of ground beef from the shoulder (80% meat/20% fat)
- Salt and freshly ground black pepper
- Pieces of cheese, variety of your choice
- Mini hamburger slider buns
Spicy mayonnaise
- 1 cup mayonnaise
- 2 chipotle peppers in adobo sauce
- 1 tbsp adobo sauce
- Juice of 1/2 lime
- Salt and freshly ground black pepper
Fillings
- Spicy mayonnaise
- Pickles
- Red onion rings
Preparation:
- Spicy mayonnaise: Place the mayonnaise, chili sauce, and lime juice in a food processor and puree. Season with salt and pepper to taste.
Hamburgers: Form the meat into tight patties weighing 55-85 grams. Season with salt and pepper.
- Preheat the grill to medium-high. Place the patties on the grill. Cook for about 4-5 minutes, until they are cooked through and crispy on one side, then flip and cook for another 4 minutes.
When the patties are done, top each with a slice of your favorite cheese and close the grill to melt the cheese. Place the patty on a half mini burger bun, top with spicy mayo, and any other toppings you'd like.
