Grilled lamb chop sandwich with muhammara sauce topcook.tomathouse.com
Ingredients:
Sandwich with cutlet
- 600 g of minced young lamb
- 1 serving (550 - 700 g) of ready-made yeast dough for assembling a sandwich
- 450 g grated aged Kaseri cheese
- 1/2 cup finely chopped parsley leaves
- 1/3 cup Greek yogurt
- 2 crushed cloves of garlic
- 2 tsp ground coriander from roasted seeds
- 1 teaspoon coarse salt
- 1/2 tsp ground cumin from roasted seeds
- 1/2 tsp paprika
- 1/4 tsp ground allspice
- Olive oil
- Muhammara Sauce (see recipe below)
- 4 large sweet onions, thinly sliced and grilled
Muhammara sauce
- 450 g charred, peeled, seeded and coarsely chopped red bell pepper
- 1-2 small hot red peppers, charred, peeled, seeded and coarsely chopped
- 1 cup (about 140 g) toasted walnuts, chopped
- 1 coarsely chopped clove of garlic
- 1 tsp ground cumin from freshly roasted seeds
- Salt
- 1/2 tsp smoked paprika
- 2 tbsp. l. olive oil
- 1 tbsp. pomegranate molasses
- 1 tbsp sherry vinegar
- Zest and juice of 1/2 lemon
Preparation:
- Muhammara Sauce: Place all ingredients except the lemon zest in a food processor and process until smooth. (Start with 1 hot pepper, taste, and then add more if you prefer a spicier flavor.) If the mixture is too thick, add more olive oil. Add the lemon zest and mix by hand. Taste and add more salt and hot pepper if desired.
- Set the grill to indirect heat and preheat to medium-high.
In a large bowl, combine the parsley, yogurt, garlic, coriander, salt, cumin, paprika, and allspice. Add the ground meat and mix gently but thoroughly with your hands. Form the meat into four patties, each approximately 10 x 15 cm, 1.5 cm thick.
- Flatten the pizza dough into a rectangle. Lightly grease one side with oil. Grill, greased side down, over medium-high heat until the bottom is shiny. Lightly grease the top and flip the dough over. Sprinkle the dough with cheese and cook until the bottom is shiny.
Move the tortilla to indirect heat, close the grill, and cook until the cheese is melted and the dough is set, about 3-5 minutes. Cut the tortilla into rectangles roughly the size of the patties and keep warm while you fry the patties.
- Lightly brush the patties with oil and place them on the hot part of the grill.
Grill for 2-3 minutes, flip, and cook for another 2-3 minutes until medium-rare. Transfer the patties to the bread, top with the muhammara and grilled onions, and top with another piece of grilled pizza dough. Return the sandwiches to the grill over low or indirect heat and grill for a few seconds on each side.
Remove sandwiches from the grill, cut the sandwiches in half lengthwise diagonally and serve immediately.
