Ingredients:
- 110 g finely chopped butter, plus a little extra for greasing the pans
- 0.5 cups whole milk
- 1 cup of sugar
- 1 tbsp. vanilla extract
- 1/4 teaspoon salt
- 1 and 1/4 cups premium flour
- 2 tsp baking powder
- 1/4 cup cane sugar
- 2 tbsp cocoa powder, plus extra for garnish
- 2 tbsp. instant espresso
- 1 and 1/4 cups hot water
- 2 tbsp coffee liqueur or dark rum (optional)
- Powdered sugar for decoration
Preparation:
- Preheat oven to 180°C.
Take 6 ramekins (oven-proof ceramic dish) of 250 ml capacity each, grease them with a thin layer of butter and place on a baking sheet; set aside.
In a medium microwave-safe bowl, add the butter and milk and microwave in 30-second intervals until the butter is melted.
Add 0.5 cups of sugar, vanilla extract, and salt and whisk until smooth. Stir in the flour and baking powder. Pour the mixture into the prepared ramekins.
- In a small bowl, combine the remaining 1/2 cup sugar, cane sugar, cocoa powder, and instant coffee; sprinkle the mixture over the dough. Pour hot water into the ramekins containing the dough (about 3 tablespoons per ramekin); do not stir.
- Bake for about 30 minutes (pierce the dough with a toothpick; if it comes out clean, the dough is baked). Remove the baking sheet from the oven and brush the top of the dough with liqueur, if desired.
Lightly dust each serving with cocoa powder and powdered sugar. Let the cakes sit for at least 30 minutes before serving.
