Ingredients:
- 350 g chicken breast, diced
- 3/4 cup dried cranberries
- 3/4 cup mayonnaise
- 1/2 cup chopped walnuts
- 2 shallots, chopped (white and green parts)
- 1.5 tsp curry powder
- 1/2 medium apple, peeled and diced
- 8 slices special whole grain sandwich bread
Preparation:
- In a large bowl, combine the chicken, cranberries, mayonnaise, walnuts, shallots, curry powder, and apple. Toss the salad thoroughly.
Cut off all the crusts from the bread, you won't need them.
- Spread the chicken filling evenly on a slice of bread and top with a second slice. Using a bread knife, cut the sandwich along two diagonals to create four identical triangles. Repeat with the remaining bread and filling, making a total of 16 sandwiches.
