Char-Grilled Blueberry Peach Bourbon Cobbler

Ingredients:

    Filling

  • 5 sliced ​​peaches
  • 3/4 cup blueberries
  • 1/4 cup bourbon
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 tsp grated lemon zest
  • 1 teaspoon lemon juice
  • 1/2 tsp vanilla extract

    Topping

  • 1 cup flour
  • 1 cup oatmeal
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 170 g butter, cut into small cubes
  • 2 tbsp. heavy cream
  • 1 liter vanilla yogurt for serving

Preparation:

  1. Build a fire and wait until the flames die down and the coals glow red with white ash.

    Make the fillingIn a large bowl, combine peaches, blueberries, bourbon, sugar, cornstarch, cinnamon, lemon zest, lemon juice, and vanilla. Mix well. Set aside.
  2. Make the toppingIn a second large bowl, combine the flour, oats, sugar, and salt. Add the cubed butter and beat it into the flour using your hands or a blender. Mix until the mixture becomes lumpy. Add the heavy cream and mix thoroughly until smooth.

    You can use as a topping oatmeal muesli.
  3. Pour the filling into cast iron skillet Or a 30cm diameter cauldron with a lid. Spread the topping on top, then cover with a lid. Place the pan over hot coals, making sure there's no flame. Use a poker or other tool to place coals on the lid. Cook for 45 to 50 minutes, rotating the pan 90 degrees every 10 minutes to ensure even cooking.

    Initially, add plenty of wood to the fire to heat the coals well. Add more hot coals to the top 2 or 3 times during cooking to keep the top hot. When the cobbler is done, the filling will be bubbling around the edges.
