Ingredients:
- 110g double-smoked bacon, finely diced, plus more for serving
- 1 tbsp. l. olive oil
- 1 large onion, finely chopped
- 0.5 tsp salt
- 1 cup of yogurt
- 1/2 cup cream cheese
- 1.5 s. grated cheddar cheese
- 1 tbsp Worcestershire sauce
- 2 tablespoons chopped green onions
- 2 large carrots, sliced diagonally, for garnish, optional
- Croutons, for serving, optional
Preparation:
- Place a medium skillet over medium heat, add olive oil, and add the bacon. Cook, stirring frequently, until golden brown and crispy, about 8 minutes. Using a slotted spoon, transfer the bacon to a plate lined with paper towels.
Add the onion and cook over low heat in the bacon fat, stirring frequently. The onion should caramelize thoroughly, which will take about 15 minutes. Transfer the onion and bacon to a heatproof bowl.
- In the same bowl, add and mix together the cream cheese, yogurt, Worcestershire sauce, and cheddar cheese. Place in a preheated oven at 200°C (400°F) and bake for 15 minutes, until golden and bubbly. Garnish with green onions and the remaining bacon. Serve with carrot chips or croutons.
