Airy waffles made from rice, chickpea flour and tapioca

Ingredients:

  • 1 cup gluten-free rice flour
  • 0.5 cups gluten-free chickpea flour
  • 0.5 cup tapioca flour
  • 3 tablespoons of sugar
  • 1.5 tsp baking powder
  • 1 teaspoon vanilla extract
  • 0.5 tsp fine salt
  • 1 cup of milk
  • 0.5 cups vegetable oil, plus extra for greasing the waffle iron
  • 2 large eggs, yolk and white separately
  • Softened butter and maple syrup
  • You will need: waffle iron

Preparation:

  1. In a large bowl, combine the rice flour, chickpea flour, tapioca flour, sugar, baking powder, vanilla, and salt. In another bowl, whisk together the milk, vegetable oil, and egg yolks; add to the flour mixture and mix gently.
  2. In a separate bowl, beat the egg whites until soft peaks form, about 3 minutes, then add them to the bowl with the flour.
  3. Preheat the waffle iron to medium. Preheat the oven to 100°C.

    Lightly grease the top and bottom of a waffle iron. Pour the batter into the iron until it's three-quarters full. Carefully close the lid and cook until the waffles are golden brown, 6-7 minutes. Keep the finished waffles warm in the oven or on a plate, wrapped in foil, while you cook the rest.

    Serve with butter and maple syrup.
