Ingredients:
- 4 pork loins on the bone (300 to 350 g each)
- 2 tbsp. l. brown sugar
- 1 tbsp paprika
- 2 tsp mustard powder
- 2 tsp honey mustard, plus more for serving
- 2 tablespoons lemon juice
- 3 tablespoons olive oil, plus more for grilling
- 450 g carrots, coarsely grated (about 4 cups)
- 1 cup chopped parsley
- 1/4 cup chopped chives
- 1/4 cup salted roasted sunflower seeds
Preparation:
- Preheat grill to medium heat.
In a small bowl, combine brown sugar, paprika, and mustard powder. Sprinkle the pork with salt and pepper and rub the spice mixture into the pork.
- In a large bowl, combine honey mustard, lemon juice, 1/2 teaspoon salt, and ground pepper; add olive oil and whisk. Add carrots, parsley, onion, and sunflower seeds and mix well. Refrigerate the carrot salad while you prepare the pork loin.
- Lightly grease the grill grate. Grill the pork loin, covered, for about 4 minutes per side. Uncover and cook for about 1 minute more, or until the meat reaches 325°F (165°C). Serve with carrot salad and honey mustard.
