Grilled pork loin with carrot salad

Ingredients:

  • 4 pork loins on the bone (300 to 350 g each)
  • 2 tbsp. l. brown sugar
  • 1 tbsp paprika
  • 2 tsp mustard powder
  • 2 tsp honey mustard, plus more for serving
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil, plus more for grilling
  • 450 g carrots, coarsely grated (about 4 cups)
  • 1 cup chopped parsley
  • 1/4 cup chopped chives
  • 1/4 cup salted roasted sunflower seeds

Preparation:

  1. Preheat grill to medium heat.

    In a small bowl, combine brown sugar, paprika, and mustard powder. Sprinkle the pork with salt and pepper and rub the spice mixture into the pork.
  2. In a large bowl, combine honey mustard, lemon juice, 1/2 teaspoon salt, and ground pepper; add olive oil and whisk. Add carrots, parsley, onion, and sunflower seeds and mix well. Refrigerate the carrot salad while you prepare the pork loin.
  3. Lightly grease the grill grate. Grill the pork loin, covered, for about 4 minutes per side. Uncover and cook for about 1 minute more, or until the meat reaches 325°F (165°C). Serve with carrot salad and honey mustard.
