Berry crumble

Ingredients:

    Dough

  • 1.25 cups premium flour
  • 1 tbsp. granulated sugar
  • 0.5 tsp salt
  • 4 tablespoons cold margarine
  • 6 tbsp cold butter, cut into small pieces
  • 2 tablespoons apple cider vinegar
  • 2-4 tbsp. ice water

    Confectionery crumbs

  • 0.75 cups rolled oats
  • 0.5 cups flour
  • 0.5 cup brown sugar
  • 0.5 tsp salt
  • 0.25 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 6 tbsp cold butter, cut into small pieces

    Filling

  • 6 cups mixed berries (blackberries, raspberries, and blueberries)
  • 0.33 cups granulated sugar
  • 0.33 cups brown sugar
  • 3 tablespoons lemon juice
  • 2 tbsp instant tapioca
  • 0.25 tsp ground cinnamon
  • 0.25 tsp ground cardamom
  • 0.25 tsp salt

Preparation:

  1. Prepare the doughCombine flour, granulated sugar, and salt in a food processor. Add margarine and process until coarse crumbs form. Add butter and process until the ingredients are combined but pea-sized pieces remain. Add apple cider vinegar and 2 tablespoons of ice water until the dough begins to come together but remains crumbly. Add another 2 tablespoons of water if needed. Place the dough on plastic wrap and form into a patty. Wrap in plastic wrap and refrigerate for 1 hour or overnight.
  2. Prepare the top layerCombine the oats, flour, brown sugar, salt, cinnamon, and cloves in a medium bowl. Use your hands to mix in the butter until it forms lumps. Refrigerate until ready to assemble the pie.

    Make the fillingCombine berries, granulated sugar, brown sugar, lemon juice, tapioca, cinnamon, cardamom, and salt in a large bowl; mix well.
  3. Place the baking sheet on the bottom rack of the oven and preheat to 220°C. Roll the dough out on a lightly floured surface into a 30cm circle; place it in a 20cm pie pan and score the edges. Refrigerate until set, at least 20 minutes.
  4. Pour the berry filling into the crust and top with a crumble topping. Place the pie on a hot baking sheet and bake for 20 minutes. Reduce the temperature to 190°C (375°F) and continue baking, rotating the pie halfway through, until the crust is golden brown and the filling is bubbling, 35-40 minutes. Transfer to a wire rack and let cool completely.
