Eggplant steaks with cheese

Ingredients:

  • 8 round slices (0.5 cm each) eggplants, soaked in salt water
  • 1/4 cup Worcestershire sauce
  • 1/4 cup thick steak sauce
  • 1/2 cup olive oil
  • 2 tablespoons of honey
  • 2 teaspoons apple cider vinegar
  • 1 tbsp. grated parmesan
  • 3 tbsp chopped parsley, optional

Preparation:

  1. In a small bowl, combine Worcestershire sauce, steak sauce, olive oil, honey, and apple cider vinegar. Season with salt and pepper.
  2. Pat the eggplant slices dry with paper towels. Brush both sides of the eggplants with the sauce using a pastry brush.

    Place the slices on a baking sheet fitted with a rack. Place the baking sheet in a preheated oven under the broiler and cook the eggplant for about 2 minutes.
  3. When they are well browned, turn the slices over and fry the other side.

    Sprinkle the slices generously with Parmesan and grill for another minute until golden brown. Garnish with chopped herbs before serving.
