Tomato salad with grilled bread topcook.tomathouse.com
Ingredients:
- Olive oil
- 1 small red onion, cut into rings
- 1 piece (4 cm) ginger, peeled and grated
- Pinch cayenne pepper
- Juice of 1/2 lime
- 500-600 g (5 medium tomatoes) tomatoes, diced
- 1/4 cup chopped fresh cilantro
- 4 - 6 small Pete or lavash
- Coarse salt
- Natural yogurt, for serving
Preparation:
- Heat olive oil in a skillet over medium-high heat. Add red onion and cook, stirring, until golden brown, 6 to 8 minutes. Transfer to a cutting board to cool slightly, then coarsely chop.
- Combine ginger, cayenne pepper, and lime juice in a bowl, then add fried onions, tomatoes, and cilantro. Let the salad sit at room temperature for 20 minutes.
- Preheat the grill to medium-high heat. Brush the bread with olive oil and sprinkle with salt. Place the bread on the grill and grill until heated through and lightly charred, about 2 minutes per side, brushing with additional olive oil.
- Add 1/2 teaspoon of salt to the tomato salad and mix gently. Spread yogurt on the bread and top with the tomato salad.
